Our vineyard is located on the south-eastern slopes of a hill, where manual harvesting took place at the end of October 2022, with significant yield restrictions. Malic acid decomposition was carried out during controlled fermentation, followed by gentle pressing to extract the juice. Two-thirds of the wine was aged in three-year-old, premium, 500-liter French Seguin Moreau oak barrels, and one-third was aged reductively. Once the process was complete, we blended the batches back together in the appropriate proportions.
